Ingredients

Nushi's Varomarised (Cocaine) Chook

  • 1 chicken, mine was 1.4kgs
  • 6 cloves garlic
  • 1 sage sprig, approx 6 leaves
  • 1 bunch lemon thyme
  • 1 small jar thick apple sauce
  • 1 serve homemade onion soup

Recipe's preparation

    Here's how to make the magic happen.............
  1. Boil a jug of water.

     

     

  2. Remove chicken from packaging and rinse under tap, I gave the inside a good wash, you never know what is left behind.  Pat dry with a paper towel.

     

  3. Place garlic, sage and half of the lemon thyme into the chicken cavity.  This gives the chicken a lovely flavour infused through the chicken.

     

  4. Cover chicken with apple sauce.  I found that using a silicone basting brush very handy.  Place chicken in larger varoma tray.

     

  5. Sprinkle homemade onion soup on top, ensuring all of chicken is covered with mixture.

     

    I like making my own soup mix so I can control how much salt is included into it.

     

  6. Pour boiled water into the TM bowl yo the 1.5L mark and set TM to 45 mins/Varoma/Sp 2.  Place varoma tray on top with lid on. (Using boiling water means you don't waste time waiting for it to boil in the TM).

     

    During the last 20 mins of cooking set oven to 180C.

     

  7. After the 45 mins was up I checked the chicken to see if it was cooked.  The juices ran clear. The chicken can be removed from the varoma and eaten at this stage.

     

    My kids like crispy skin, so to just make the skin a little bit more crispy I placed it in the oven for about 10 - 15 mins.

     

  8. While chicken was in the oven I cooked mashed potatoes in the TM and minted peas in the varoma. 

     

    Served with the chicken, mashed potatoes and peas I mixed up some homemade au jus.  Kids just love the 'dipping'.

     

  9. Chicken was fall off the bone moist. 

Tip

There may be a tonne of recipes out there similar to this one, but this was an experimentation that I made for my family.  This recipe i have written above is the process that worked for me.  It is a a great way to cook a chicken, just set and forget. 

 

The size of your chicken will determine how long it needs to cook for.  Please keep this in mind.

 

Try aprioct nectar instead of the thick apple sauce for an apricot chicken flavour.

 

Omit the apple sauce and just use the homemade onion soup for a less sweet flavour.

    This looks delicious!! I bet you had none left!

    Do you have a particular onion soup recipe you use?

    I've always wanted to make French onion soup but haven't found a recipe yet. Will have to search for one as your chicken looks amazingly good
