Ingredients

  • 75 g Buckwheat groats
  • 75 g basmati rice
  • 130 g mixed nuts eg almond and cashew
  • 20 g sultanas
  • 100 g Rapadura Sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 125 g Butter
  • 2 tablespoon natural yoghurt

Recipe's preparation

  1. Preheat the oven to 180 degrees and line two baking trays.

    Place buckwheat and rice in your bowl.  Mix for 1 minute on speed 9.  Set aside.

    Place nuts and sultanas in your bowl.  Mix for 15 seconds on speed 5.  Set aside.

    Place butter and rapadura in your bowl.  Mix for 15 seconds on speed 4 or until light and fluffy.  Return buckwheat, rice, nuts and sultanas to the bowl, along with remaining ingredients.  Mix for 15 seconds on speed 4, until just combined. 

    Place small spoonfuls of mixture on tray (they may spread, so leave enough room for that) and place in the oven for 12 minutes - until golden brown.

    i made these today with a few subsitutions.

    I used half butter/half coconut oil and also cut the rapadura down to 35g and also put 35g of rice malt syup in. I used dates instead of sultanas. Also added in a handful of shredded coconut. I used almonds and cashews as the nuts. I didn't have any natural yoghurt on hand so used coles strawberry yoghurt haha.

    I am eating one fresh out of the oven and they are yummy tmrc_emoticons.)
