Ingredients
Orange Drop Biccies
- 1 orange, zested
- 160 grams caster sugar
- 125 grams butter, room temp
- 85 grams SR flour
- 165 grams plain flour
- 60 grams Desiccated Coconut
- 50 sheet orange juice, but save the rest for the icing
- 1 egg
- 200 grams icing sugar
- 30 grams Butter
- remaining orange juice

- Peel the rind of 1 orange (just the rind, not the bitter white pith) and add to the bowl with
160gm sugar and blitz for 5 secs/speed 8.
Juice the orange and set that aside.
Add to the bowl: butter, flours,dessciated coconut, 50gm juice from the orange (don’t sip the rest, you’ll need it for the icing) and the egg
Mix for 10 secs/speed 3, increase to speed 4 for another 10 seconds. Stop and scrape down and loosen from around the blades. Mix for a further 5 secs/"Counter-clockwise operation" /speed 4.
Place dessertspoons dollops of mixture onto a lined baking tray and cook for about 10 minutes in a moderate oven (180 degrees) They don’t spread a lot so 2-3cms between each one will be enough space. They’re also a pretty rustic looking biccie so you don’t need to be too fussed about rolling them into neat balls either, they will do their own thing and flatten enough to be iced.
They also don’t go a golden brown when cooked, so don’t leave them till they look brown, just watch and judge for yourself when they get a little borown at the bottom (we like soft biccies in our house).
Cool them on a rack and then ice with some orange icing.
Place about 200gm icing sugar in a small bowl with 30gm butter. Place the rest of the orange juice in a cup and microwave until it ‘boils’ Pour onto butter, a little at a time and mix through until the desired consistency is achieved. Add more boiling water if it is too thick (not too much or you’ll dilute the orange flavour) or add more icing sugar if it is too runny.
