Keto Choc Chip Cookies
- 130 g blanched almond meal
- 20 g powdered sugar substitute, (or mill sugar alternative)
- .5 tsp baking powder
- 40 g butter, melted
- 1 tsp vanilla
- 20 g thickened cream
- 50 g Sugar free Choc Chips
- pinch salt (be generous)

- Preheat oven to 160 degrees and line a tray with baking paper.
- If using, add 20gm sugar alternative to a clean dry bowl and blitz for 10 seconds/speed 8.
- Add 130gm almond meal and 1/2 tsp baking powder and 'sift' for 10 seconds/speed 3.
- You can set aside in another bowl and melt your butter (2 mins/60deg/speed 2) or just melt it in a cup in the microwave).
- Add melted butter, vanilla and cream to dry ingredients and mix for 15 seconds/speed 2.
- Scrape down sides and add choc chips.
- Mix for 15 seconds/reverse/speed 2.
- Roll dessertspoon size portions into a ball and flatten slightly on the tray.
- Bake for 10-15 minutes.
Bake them for a little longer than ‘golden’ as they won’t be crunchy when cool. - Let them cool on the tray then store in an airtight container with a handful of uncooked rice. It will absorb any excess moisture and stop biscuits from going too soft.
Tip
This recipe makes about 12 biscuits but there is plenty of room in the bowl if you want to halve again or double the recipe.
Uncooked balls of dough freeze well and are an easy treat to have on hand in the freezer
