Ingredients

Coconut Lemon Slice

  • peel from half a lemon, (no white pith)
  • 250 grams Packet Milk Arrowroot Biscuits
  • 150 grams White Choc Bits
  • 90 grams dessicated coconut
  • 175 grams sweetened condensed milk
  • 140 grams butter, room temp

Recipe's preparation

  1. Place peel into bowl and blitz for 15secs/speed 8. Scrape down sides and repeat. (Don’t worry if the peel looks a bit chunky, it will blitz up fine with the biscuits.)
  2. Add biscuits and process for 5 secs/speed 7.
  3. Add white choc bits and turbo twice for .5 second.
  4. Add coconut and set aside in another bowl. Don’t bother washing TM bowl.
  5. Add condensed milk and butter and melt for 2mins 30 secs/60degrees/speed 2. You may need to scrape and repeat for a further 30 seconds if there were bits of butter caught on the top of the blades.
  6. Add reserved biscuits mix and mix for 10 secs/rev/speed 2, then another 10 secs/rev/speed 3. Scrape down and mix for a further 10 secs/rev/speed 4.
  7. Press into a slice tin, ice with lemon icing, sprinkle with extra coconut and refrigerate for an hour before cutting.

Tip

Another thing to remember, when melting these ingredients, if it doesn’t look like it will melt in the time set, increase the blade speed instead of the temperature and it will happen. You don't want to increase the temperature and risk having it too warm it melts your choc bits.
