Carrot Cake
- 200 g carrot, washed and roughly chopped
- 200 g Butter, soft
- 5 eggs
- 50 g Sugar substitute
- 2 tsp Vanilla Bean Paste
- 50 g Chopped walnuts
- 50 g Coconut, shredded
- 150 g blanched almond meal
- 1 tsp cinnamon
- 2 tsp mixed spice
- 1 tsp ground ginger
- 2 tsp baking powder
Cream Cheese Frosting
- 250 g cream cheese, soft
- 40 g Butter, soft
- 4 tbsp icing sugar substitute
- 1 tsp Vanilla Bean Paste

- Preheat oven to 180degrees and grease and line a 20cm square cake tin.
- Add chopped carrots to a clean bowl.
- Grate for 5 seconds/speed 5. Set aside in a small bowl. Don't bother washing thermie bowl
- Add butter, eggs, ‘sugar’ and vanilla
- Mix for 20 seconds/speed 3.5
Scrape down sides. - Add carrot, walnuts, coconut, almond meal, cinnamon, mixed spice, ground ginger and baking powder.
- Mix for 20 seconds/speed 3.5
Scrape down sides., - Repeat for 10 seconds/reverse/speed 3
- Pour into prepared cake tin and bake for 40 minutes or until a skewer comes out clean.Let cake cool completely before frosting.
- Add cream cheese, butter, vanilla and icing sugar substitute to a clean dry bowl.
- Beat for 2 mins/speed 3.
Scrape down sides. - Taste for sweetness. If OK, beat for another 60 seconds/speed 3 or until smooth and lump free.

Tip
I found this recipe on the web and converted it to a thermomix method. Aparently approx 4gm net carbs per slice, if cut into 12 slices.
