Ingredients

Paleo fruit cake

  • 230 grams almonds
  • 80 grams pitted dates
  • 80 grams walnuts
  • 145 grams mixed dried fruit
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp sea salt
  • 2 tbsp coconut oil, melted
  • 4 eggs
  • 1 tbsp honey, maple syrup or unrefined sugar
  • 1 tbsp lemon zest, grated
  • 1 tbsp orange zest, grated

Recipe's preparation

  1. Preheat oven to 180 degrees. Grease 2 x small log pans or 3 x 6 capacity cupcake trays
  2. Add almonds to TM bowl and grind 10 sec/speed 7.5. Remove from TM bowl and set aside
  3. Add dates and walnuts to TM bowl and chop 3sec/speed 5
  4. Add mixed dried fruit, Bi carb soda, sea salt and almond meal and mix 5 sec/speed 5
  5. Combine wet ingredients including zest and sweetener of choice and add to TM bowl and mix 20sec/speed 4
  6. Spoon into prepared tins and bake at 180 degrees for 20-30 minutes for log tins and 12-15min for cupcakes

Tip

I make these as cupcakes (as pictured) and bake for 15 min.
