Ingredients

Biscuit

  • 165 g pepitas, (shelled pumpkin seeds)
  • 150 g sunflower seeds
  • 10 g vanilla extract, (2 teaspoons)
  • 70 g Pure Maple Syrup, (or 80g rice malt syrup for less sweetness)
  • 1/2 tsp salt, (pink himalayan or celtic is best, fine)
  • 1/2 tsp baking powder
  • 50-70 g coconut oil, (melted or soft)
  • 75 g Dried currants

Recipe's preparation

  1. Preheat oven 170C and line a baking sheet.  Place pepitas and sunflower seeds into Closed lid"Closed lid" and mill for 5 sec / speed 10.

     

     

     

  2. Add vanilla, maple syrup OR rice malt syrup, salt, baking powder and coconut oil to the Closed lid"Closed lid" and blend for 10 sec / speed 4.5.  You can scrape down sides and continue for another 5 sec if necessary.

     

     

     

  3. Add currants to Closed lid"Closed lid" and mix for 15 sec / Counter-clockwise operation"Counter-clockwise operation" speed 2

     

     

     

  4. Form tablespoon size balls from mixture by rolling in wet hands and place on the prepared baking sheet.  You should be able to roll out 24-28 balls.  With a wet fork, flatten the balls slightly into a biscuit shape. Place into the oven and bake for 13-15 mins.

     

    Biscuits will be soft when warm but will soon cool to a more crunchy texture.

     

    Store in an airtight container for up to 2 weeks.

Tip

These are my favourite light and guilt-free biscuit.  They make the perfect accompaniment to herbal tea (lemon myrtle is my favourite).  They are allergy friendly and can go into the kids' lunchboxes.

    Found this recipe while looking for a late evening snack, just went FODMAP too, so have been on a learning curve to find new recipies.

    This was very easy and delicious! I didn't have vanilla so added a bit of cocopowder instead.

    I don't have the TM31 so I just guessed due to the size of the mixture.  I'm so pleased that you like them so much!  Sultanas would be great too.  I often trick people with these as they look like choc chip .... but I am yet to find someone truly disappointed that they're not.  Thanks for starry love too! xx

    Can use in TM31. Didn't realise that it was for TM5 but work with the good old TM31. They were so yummy you just can't stop at one. I totally agree they will not last 2 weeks. I didn't have currants so used sultanas. Thanks so much for sharing  Cooking 7

    These were so yummy and ridiculously easy to make! After tasting them, I had to chuckle at the last line "store in airtight container for up to 2 weeks" - there is NO way they would last that long in our house!  Thanks for sharing this recipe, will add to my faves tmrc_emoticons.)
