Ingredients
Puteri Ayu (Quinn's)
- 270 g plain flour
- 1 tsp baking powder
- 100 g water
- 7 leaves pandan leaves, Or 1 tsb pandan essence
- 100 g coconut milk
- 3 eggs
- 180 g caster sugar
- 15 g Ovallete, Or 1 tsb baking powder
- 250 g Shredded coconut
- 20 g tapioca flour
- 1/2 teaspoons salt
- 20 g water

- Add plain flour & baking powder. Turbo 2 sec. Put aside.
- Blend water & pandan leaves to get the pandan juice. 30sec/sp10. Strain to drain the juice.
- Mix the 100g pandan juice with 100g coconut cream. put aside. Clean the mixing bowl
- In a dry clean mixing bowl, insert the butterfly whisk.
place the 3 eggs, 180g caster sugar & 15g ovellete (or 1 tsb baking powder)
5 mins/sp 2.5 - Add in the flour mixture and the pandan coconut mixture through the measuring cup hole, in a little increment at a time while
Continue mixing for 5 mins/sp 2.5 - Transfer the mixture into a piping bag (optional). Put aside.
- In a bowl, mix well the toppings ing: dessicated coconut, tapioca flour and salt & a little water.
- Oil the puteri ayu mould.
Place in the coconut topping mixture into the puteri ayu mould. Press firmly. - Pipe in the pandan mixture in each mould. Then Steam 15 mins / varoma / sp 1
