Ingredients
Raw Mango Cheesecake filling
- 625 grams Raw cashew nuts (Pre soaked), Cover cashew nuts in fresh water for 2 hours, then rinse and draIn well before using
- 2 Whole ripe mango's flesh removed
- 100 grams rice bran syrup or honey
- 200 grams coconut oil
- 1 Vanilla Pod Split and seeds scraped out to use
- 125g coconut cream
Raw Base
- 375 grams almonds
- 250 grams Dates (pitted)
- 125 grams dried coconut
- 1/4 teaspoon vanilla extract
- 1 pinch Himalayan salt (or rock salt)

The Raw Base
Step 1: Add all base ingredients in the "Closed lid" and blend on speed 8 for 30 seconds.
Step 2: Press base into desired container .6cm thickness (I used silicone muffin pans) a lined spring form cake pan works well also.
Step 3: Cover with cling wrap and place in freezer while making filling.
Step 4: Clean and dry bowl
Step 1: Add all Filling ingredients to the "Closed lid"
Mix on speed 9 for 1 min 30 seconds stopping to scrape down and help combine with your spatula ( It should look creamy)
Step 2: Pour filling on top of base, smooth out the top and cover with cling wrap or a plastic bag and place in the freezer.
Step 3: Chill for at least 2 hours or overnight before serving.

Tip
Remove this Raw cake from the freezer and place in the fridge 2 hours before serving for an easy to eat texture.
It will keep covered in the freezer for up to 2 weeks so is a great cake to make ahead of time.
Top with freshly sliced mango and finely chopped mint. Very Fresh.

I just tried to make the base. Since the recipe doesn't specify to use fresh dates, I used dried dates. It apperas that it just hasn't worked with dried. The base isn't bound at all. It's just dry and crumbly. I'm assuming that we must have to use fresh dates. I wish i'd known this before the night before my daughter's birthday party
Lovely texture. Not so sure on the taste of the coconut oil. Any suggestions on a substitute?
