- 75 grams Cranberries
- 80 grams dried apricots, cut in half
- 2 tablespoons cocoa
- 70 grams chocolate chips
- 2 tablespoons Maple syrup

- Place cashews, rolled oats, dates, cranberries, dried apricots and cocoa into mixing bowl and blend 7 seconds / speed 7
- Add chocolate chips and maple syrup and blend 3 seconds / speed 4
- Place extra shredded coconut onto a plate and set aside
- Roll tablespoons of mixture into balls (makes approx. 15 balls in total). Roll balls in coconut to coat and place into fridge for a minimum of 30 minutes to set before serving
