- 1 orange, quartered
- 140g sugar
- 1 egg
- 125g orange juice
- 100g butter, melted
- 230g plain flour
- 1 tsp baking powder
- 1 tsp baking soda
- 70g sultanas

Put the orange and sugar into the bowl and mill for 5 secs/speed 6.
Add the egg, juice and melted butter and mix for 5 secs/speed 4.
Add the dry ingredients and the sultanas and mix for 15 secs/speed 3 until just combined.
Spoon the mixture into a 12 hole muffin tin with muffin cases and bake at 200C for 15 mins or until golden brown.

I have made these muffins twice now with choc chips instead of sultanas (Jaffa!) and they are a family favourite. Super soft and tasty, awesome recipe 👏

I love these muffins. Today I changed things up a bit. This were my substitutes -
Orange - replaced with lemon
orange juice - Nudie Aloha blend juice
sultanas - shredded coconut
white choc chips in top
absolute winner!
These are delicious!
I actually didn't use the whole orange, just grated some zest from the peel and used the entire inside of the orange. Also added whole dried dates which I softened with some boiling water & then chopped along with the orange. Also used half the butter & made the quantity up with greek yoghurt.

Hello - just thought I should write a note because I’ve made these now so many times for school lunchboxes and they’re always a winner!
A few mods I use:
i peal the zest off with a vegetable peeler, and get rid of the pith (not sure if it makes a difference but doesn’t take long!), I use only 100g sugar, and just water, not juice (we never have any!)
no sultanas for the picky 3 yo, but stir them in after spooning out a few sultanaless ones.
kids love them!
I also used dates to replace the sugar and choc chips instead of sultanas with a great result! I couldn’t find my muffin tin so made it as a round cake with about 40mins in the oven. Really delicious!

Have tried with GF flour, reduced sugar content to 40 gram and added cranberries as well as sultanas and they turn out every time! Also, have used pineapple juice instead of orange juice and they are still YUMMY!!!
