Ingredients
Dry Mix
- 190 g plain all purpose flour
- 5 g bicarbonate soda
- 5 g cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp salt
Wet Mix
- 200 g brown sugar
- 70 g Raw or White Sugar
- 220 g Butter
- 2 eggs
- 5 g vanilla extract
Additional Ingredients
- 240 g rolled oats
- 150 g raisins

Preheat oven to 180 degrees. Line baking tray with baking paper and set aside.
Add flour, bicarbonate soda, cinnamon, cloves and salt to TM bowl and mix 5 sec/speed 10. Pour Dry Mix into a bowl and set aside.
Add brown sugar and raw or white sugar to TM bowl and pulverise 10 sec/speed 9.
Add butter to bowl and chop 5 sec/speed 8.
Insert butterfly attachment, and add eggs and vanilla. Whip for 30 sec/speed 4.
Remove butterfly, and add reserved Dry Mix to bowl. Mix 10 sec/speed 7.
Add rolled oats and raisins and mix 15 sec//speed 3.
Scoop out cookie dough onto baking tray. No need to flatten dough, they will flatten when baking.
Bake cookies in prepared oven for 10-12 mins depending on size, and until they're light brown around the edges. This will result in a nice soft chewy cookie. For crunchier cookies, bake a couple of mins longer.
Turn out onto cooling rack immediately after baking.
Tip
If you like your cookies really sweet, use 220g brown sugar and 100g raw or white sugar.
