BASE
- 1/2 cup plain flour
- 1/2 cup self-raising flour
- 1/2 cup dessicated coconut
- 1/2 cup caster sugar
- 110g unsalted butter, (Melted)
FILLING
- 395g condensed milk
- 2 tablespoons golden syrup
- 1/4 cup brown sugar
- 60g unsalted butter, (Melted)
TOPPING
- 2 eggs
- 1/3 cup caster sugar
- 2 cups dessicated coconut

- 1. Preheat oven to 180 degrees.
2. Grease a slice pan and line with baking paper with baking paper extending over the sides.
3. Place ALL BASE ingredients in your Thermomix bowl and combine for 10 seconds on speed 3.
4. Stir with your spatula to mix in any loose flour and then pour into your prepared pan, spreading evenly and pressing down firmly. Cook for 15 minutes in the oven or until golden.
5. Rinse and dry bowl.
6. Place all filling ingredients in bowl and mix for 10 seconds on speed 3.5. Spread evenly over base.
7. Rinse the bowl and then place all topping ingredients inside and combine for 5 seconds on speed 3.5. Spread evenly over filling in pan and press down gently to form an even surface.
8. Bake in the oven for 20 minutes or until golden.
9. Let cool completely before slicing, place in the fridge to cool faster.
Tip
▪Use the excess baking paper over the sides to lift the slice out of the pan.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Made this tonight..very easy to follow instructions and everything was in the pantry already. I was skeptical that the caramel wouldn't cook long enough to have a good flavour but it was fantastic!! I did cook the slice for a few minutes longer. It's quite rich so a small piece goes nicely with a strong coffee. Will definitely make this again 😋
