Ingredients

  • 500 grams flour, Self Raising
  • 125 grams Butter
  • 1 level tablespoon cinnamon
  • 1 whole orange (medium), cut into quarters
  • 1 Green Apple (skin on), medium size, cut into quarters
  • 2 Carrots medium, cut into 2-3cm portions
  • 200 grams Whole walnuts
  • 2 eggs
  • 200 grams Raisins or craisins

Recipe's preparation

    Method
  1. PREHEAT oven to 180 degrees; Line the base & grease of a loaf tin with a 4 cup capacity.

    PLACE 500g Self Raising Flour, 125g Butter & 1 level Tablespoon Ground Cinnamon in the Jug.

    BLEND Speed 5, 5 seconds to combine. Set aside in a dish.

    Without cleaning-

    PLACE into the Jug-

    1 medium size Orange

    1 medium size Green Apple

    2 Medium size Carrots (cut into 2-3cm portions)

    CHOP Speed 7/ 5 seconds

    Scrape down with Spatula,

    ADD 200grams Whole Walnuts,

    SPEED 5 / 5 Seconds

    ADD 2 Eggs & Reserve flour, butter & cinnamon

    BLEND Speed 5/ 10 Seconds

    ADD 200g Raisin or Craisins

    COMBINE -REVERSE Speed 3/ 10 Seconds

    PLACE into the prepared loaf tin,

    BAKE for 1 hour 15mins, depending on your oven, when the cake is well risien & firm to touch, it is ready.

    Let it cool in the tin for 10 minutes before turning it out onto a wire rack.

Tip

Gluten Free Self Raising Flour can use & also substituting Butter for Nuttalex or Coconut oil for Dairy free.

Any substitute for Raisins or Craisns can be used, if mot prefered.

    The mixture we made was very thick and dry and the TM5 really struggled with it so had to finish off mixing by hand. The cake tasted OK although it was quite dry and somewhat crumbly. Not sure if it needed milk or yoghurt or oil to moisten. Thanks for the recipe.
