Ingredients

for the cake

  • 225g plain flour
  • 3tsp baking powder
  • 3/4tsp salt
  • 1/2tsp Bi Carb Soda
  • 3 very ripe bananas
  • 200g organic raw sugar
  • 2 eggs
  • 125g unsalted butter room temp cut in cubes
  • 100ml buttermilk
  • 1&1/2 tsp vanilla extract

for the icing

  • 250g cream cheese
  • 125g unsalted butter room temp cut in cubes
  • 500g icing sugar
  • 1&1/2tsp vanilla extract

Recipe's preparation

  1. Set oven to 180 degrees or 160 for fan forced. Prepare muffin tins with cases or grease a 26cm ring tin or equivalent. 

    Put sugar into bowl & mill 10 secs, sp 10. Set aside. 

    Put the flour, baking powder, salt & bicarb into bowl & mix 15secs, sp5. Set aside 

    Put bananas into bowl & purée 15secs, sp8. 

    Add the sugar & eggs 30secs, sp5. 

    Add butter 30secs, sp5.

    Add buttermilk & vanilla extract & turbo .5 secs 2-3 times just to mix them in.

    Add the flour & turbo .5 secs 4 times. Scraping down the sides in between. Again to just mix in. Don't over do or cake will be tough. 

    Fill cases or cake tin with mixture.

    I found as cupcakes the mixture did rise a lot so fill cases to about 3/4 to allow room to rise.

    Bake for about 20mins for cupcakes or 30-35 mins for a cake or until a fine skewer inserted in the middle comes out clean. 

    If doing a cake cool in tin for about 5-10 mins. Loosen edges with butter knife & cool on a rack. 

     

    To make icing put cream cheese & butter into bowl 15secs sp5. Add icing sugar & vanilla extract 1min sp8 or until smooth.

     

Tip

This can be made as cupcakes or whole cake.

It's an extremely soft & moist cake.

I found as cupcakes the mixture did rise a lot so fill cases to about 3/4 to allow room to rise.

As a cake 12 portions is a guess but it's a very generous cake so would serve more for sure.

    Just made this recipe, in the cupcake form, and can I just say they are amazing!!! So moist and tasty! Only had wholemeal plain flour to use, and to my delight, my kids are scoffing them down
