Vegan Date & Walnut Loaf

  • 50 grams Non-Dairy Milk
  • 1 tsp Apple Cidar Vinegar
  • 120 grams Nuttelex
  • 80 grams brown sugar
  • 100 grams White Sugar (or Raw)
  • 2 Bananas, large, ripe
  • 1 tsp Vanilla Paste
  • 250 grams plain flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp All Spice - Ground
  • 50 grams Walnuts - chopped
  • 4 Medjool Dated - Pitted & Chopped

Recipe's preparation

  1. Preheat oven 180o
    Prepare 1 Loaf Pan 10 X 20cms Set aside
    Combine milk & vinegar in a small bowl Set aside
    Insert butterfly
    Whisk nuttelex & sugars 10secs - sp3
    Scrape down sides 10secs sp2 X 2
    Add bananas, vanilla, milk-vinegar 10secs - sp3
    Remove butterfly
    Add flour, baking soda, salt, all spice 10secs - sp4
    Scrape down sides
    Add nuts & dates 10secs - sp5
    Pour batter into pan, Bake 60-70mins
    Remove pan from oven, place on a cooling rack 15 mins, transfer loaf to cooling rack, let cool completely before slicing!
    Enjoy!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

    This was really great, the flavours were really nice. I would possibly add a little less sugar next time and maybe add in some choc chips.
