White Chocolate Mud Cake
- 300 grams white chocolate
- 200 grams Butter
- 272 grams plain flour
- 1.5 teaspoons baking powder
- 240 grams Milk
- 160 grams caster sugar
- 1 teaspoons vanilla essence
- 2 eggs room temperature
- icing sugar for dusting

- Grease Bundt Cake Tin (baking tin of choice).
- Add 300g white chocolate to bowl chop 4 seconds/speed 10.
- Add 200g butter. Melt 3 minutes/80 degrees celcius/speed 4.
- Add 270g plain flour, 1.5tsp baking powder, 240g milk, 160g caster sugar, 1tsp vanilla essence, 2 eggs. Mix 20 seconds/speed 5. Scrape down sides of mixing bowl with spatula and mix again 10 seconds/speed 5.
- Pour into Bundt Cake Tin (Baking dish of choice) and bake 90 minutes (160 degrees celcius) until a skewer inserted in centre comes out clean.
- Remove tin from oven and leave to cool for 10 minutes before removing from tin and transferring to wire rack to finish cooling.
Tip
A rich but light cake that is a guaranteed crowd pleaser. It is a perfect option for birthday or celebration cake with its thick and delicious flavour.
Easter Cake - decorate with easter eggs in centre of bundt cake.
