Fruit loaf
- 10 grams dry yeast
- 300 grams tepid water
- 30 grams olive oil
- 500 grams bakers flour
- 50 grams dried apricots
- 30 grams pitted dates
- 50 grams macadamia nuts
- 50 grams almonds

Place nuts & fruit into TM bowl & chop for 3 seconds on Speed 4
Add all remaining ingredients & knead for 2 minutes on Interval Setting
Remove from TM bowl & place into Bread Tin and allow to rise for 15-20 minutes until reaches top of Bread Tin
Brush with water & place into pre-heated oven (180 degrees) for 20-30mins until hollow when tapped

Tip
Use any other fruit or nuts as preferred, eg Raisins or Craisins. Also, for Spicy Fruit Loaf add all or some of the following......1tsp Allspice, 1tsp Cinnamon, 1tsp Ginger powder, 1tso Nutmeg

This was a bit bland for my liking. I will try it again and add some spices next time.
Great fruit loaf! I added a little rye flour for added health benefits and changed the nuts to walnuts. I also let it rise once before adding it to tin and doing second rise. Also added all the spices. Turned out great! It wasn't quite as heavy as I prefer but I'd do it again for sure. Thanks for sharing a great recipe

I added mixed spice and additional dried fruit - it was great It did take a little longer to rise though.
Is there a way to make it gluten free please?
Recipe sounded great so gave it a go, didn't rise enough even with an extra 15minutes. Should have left it longer but was too impatient so cooked anyway.
Came out pretty flat and my fruit and nuts must all be somewhere in the middle of the loaf as not much in the end. Tastes ok though so I'll give it one more shot to see if I can get it right. Should have added more spice
This is a great recipe. Thank you for sharing. I included 140g of freshly milled spelt flour in the total amount of flour and it worked really well. My only problem is I must have accidently overprocessed the fruit and nuts as they are quite small bits compared to the gorgeous picture in this recipe.
I am sorry for the negative comments - I have made this A LOT and never had a problem! I have made it with only sultanas too (like a raisin bread) and it was beautiful....... I agree, it might not be the recipe/ingredients - sometimes it's the cook - even with a Thermomix!!
wanted to say thanks again for a great recipe!!!!! I now make it every Sunday , slice it thickly and freeze for my morning tea at work. I love it.

this is beautiful tasty and light. I used bun loaf mix and two sachets of dry yeast. I did read the negative comments but couldn't see any thing wrong with the ingredients or amounts. If you have a problem with a recipe you need to put this down as it may be not the recipe. Thanks for posting.
