Turkish Bread
All-Purpose (Plain) flour
- 900 g All-Purpose (Plain) flour
- 1 level teaspoons dried yeast
- 1 level teaspoons sugar raw
- 1 level teaspoons salt, flaked
- 375 g warm water
- Olive Oil to grease the bowl for rising
- 2 level teaspoons sesame seeds
- 1 level teaspoons nigella seeds
- 1/2 level teaspoons sea salt flakes
- 1 egg yolk
- 1 heaped tablespoons olive oil

- Combine flour,yeast and salt in the bowl, 15 seconds speed speed 3. Add water 30 seconds speed "Gentle stir setting" . 5 minutes "Dough mode" function.
- Turn dough into lightly oiled bowl and cover with cling film and set in a warm place to prove (away from drafts) until doubled in size.
- Preheat oven to 230 degrees Celsius.
Line two trays and place on middle shelf to heat. - Turn dough onto a lightly floured bread mat and cut in half (using a plastic spatula). Place each piece on a lined tray and stretch into a rectangle no wider than the width of your tray.
- Cover with damp tea towels and set in the same warm spot to rise for 15 minutes.
- Using the end of wooden spoon dipped in flour, poke a few holes in the bread to catch some of the oil/egg mixture.
- Place egg yolk and oil in bowl and whisk 3 seconds speed 3. Brush top of both bread then sprinkle with combined seeds then follow with a sprinkle of sea salt flakes.
- Remove prepared tray from oven and slide both loaves onto the tray. Cook for 10 minutes or until golden brown. Cool on a wire rack.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
