Recipe's preparation

    Crust
  1. 1. Pre heat oven to 180 degrees Celcius

     

    2. Place Salada biscuits in bowl and Turbo 4 - 5 times until they are broken down into chunky crumbs (not too fine)

     

    3. Add sugar and butter, combine 20 seconds speed 3 until the mixture holds together like a dough.

     

    4. Press the mixture evenly into a 22cm or 24cm pie dish. Chill for 10 minutes, then bake for 15 minutes until the crust becomes a golden colour. Remove from oven to cool. Wash and dry TM bowl.

  2. Filling
  3. 1. While the pie crust is out of the oven cooling, insert butterfly into TM bowl, and beat the egg yolks with the condensed milk, Speed 3 for 10 seconds. When 10 seconds is reached, pour the lime juice onto the lid and allow it to drip into the mixture while it is still beating. Beat a further 5 seconds.

     

    2. Pour mixture into the pie crust (pie crust doesn't have to be completely cold), and bake for 16 minutes, so the filling can set.

     

    3. Allow the pie to cool completely before cutting to serve. You can serve it with whipped cream spread over the top, or on the side.

Tip

This 'sweet and salty' citrus pie tastes something between a lime curd pie and a cheesecake. It can be eaten plain, however, adding the whipped cream on top can make it look very fancy, while adding a lovely contrast to the zesty lime flavour.
