Ingredients

Chocolate Gingerbread Fudge

  • 200 g Dark Callebaut Chocolate, (or your own preference)
  • 200 g white sugar
  • 1 can sweetened condensed milk
  • 125 g unsulted butter
  • 25 g liquid glucose
  • 1 level teaspoon Vanilla Bean Paste
  • 2 level teaspoons ground ginger
  • 1 level teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon Ground Clove

Recipe's preparation

    Chocolate Gingerbread Fudge
  1. 1. Weigh in Chocolate & mill for 10 sec speed 9. Remove from bowl & set aside.

    2. Weigh in sugar & mill for 10 sec at speed 9.

    3. Add in sweetened condensed milk, butter & liquid glucose. Cook for 8 minutes, 100 degress at speed 3.

    4. Cook for a further 20 mins, Varoma temp at speed 2.

    5. Add in milled chocolate, vanilla bean paste & all spices. Mix for 30 sec at speed 3.

    6. Line a 20 x 20cm baking tin with baking paper. Pour fudge into tin & refrigerate for at least 2 hours or until firm.

    7. Once set, cut it into 2cm squared pieces & serve. Store the remainder in the fridge.

    8. Great to give as a gift!

Different types of chocolate will give different tastes - experiment!
