  • 7 egg yolks
  • 165 grams sugar
  • 200 grams good quality dark chocolate, roughly chopped
  • 250 grams Butter, chopped and softened
  • 65 grams cocoa powder
  • 600 ml double cream
  • 1 level teaspoon vanilla extract

Recipe's preparation

  1. Place sugar in Thermomix bowl and grind for 10 secs on speed 9.

  2. Insert butterfly and add egg yolks to the sugar.  Mix on speed 4 for 3 minutes until mix is creamy and thick.

  3. Remove butterfly. Add chocolate and cook for 3 minutes at 90 degrees on speed 2.

  4. While the chocolate is still warm mix in butter pieces one at a time on speed  2 - 3.  If necessary use heat by setting the time to 3 minutes at 90 degrees on speed 2 - 3.

  5. Add cocoa and mix until mixed through, about 10 secs on speed 3 - 4.

  6. Put the cream and vanilla in and mix on speed 3 - 4 for about 10 seconds or until the cream is well mixed in.

  7. Pour into a plastic wrap lined terrine dish or loaf tin.  Cover with plastic wrap and refrigerate 12 hours or overnight.  Remove from dish and cut into slices.  Drizzle with cream and fresh or frozen berries of your choice.  Serve.

    made this last night, it's beautiful. Soo creamy and smoothe and chocolatey. worked out perfectly. I would recommend trying it, if you like marquise, you will love this one.

    Has anyone tried this? I made a marquise with exactly the same ingredients by hand and it was such a faff so I'm keen to try a thermomix one. Just strikes me that 90deg seems quite hot to do the chocolate in step 3?
    Want to know this works before I try it as it has lots of ingredients that I don't want to waste!
