Ingredients

Vanilla Ice cream

  • 600 grams full fat cream, (600 ml)
  • 1 can sweetened condensed milk, (395gm)
  • 1 tsp vanilla extract

Cookies and cream variation

  • 150 grams Chocolate biscuit (OREO are perfect), crushed/broken into small pieces

Honeycomb variation

  • 2 package Crunchie bar OR violet crumble bar, crushed/broken in to small pieces

Strawberry variation

  • 1 package Fresh Strawberries, hulled, (1 punnet) Blitzed to chosen size - chunky or smooth

Recipe's preparation

    Vanilla Ice Cream
  1. Insert butterfly.

    Add cream and vanilla to bowl and mix on SPEED 2 as you pour the condensed milk into the mix through the lid.

    Once all in increase to SPEED 3 for 2-3 minutes until mixture is thick and creamy. (I did this in two steps - 1 min 15 secs, followed by an additional 1 min - so 2min 15 sec total and it was perfect).

    Pour into suitable container and freeze until set.

     

  2. VARIATIONS
  3. Fold through chosen variant SPEED 2 REVERSE Counter-clockwise operation"Counter-clockwise operation"  5 secs.

    The variation ingredient may not be completely through the mix, but as you pour it into the freezing container it will mix a bit more. Adjust this time to your preference. 

     

Tip

Sorry about the picture - this is of the strawberry ice cream, the picture was an afterthought as my son was eating it!!!

This would work with just about any addition once the ice cream itself is made - I have tried each of these variations and it is a super creamy, easy and very quick ice cream to make.

To prepare the strawberries for the strawberry ice cream simply wash and hull then blitz 10 SEC on Speed 7 (adjust speed if you like it chunky)

    peachey06: I've had it curdle too; it just means it was mixed for too long. I've made it several times with 35% cream and it's worked well.

    The first time I made this with 35% cream it curdled and could not be used. I then made the 'strawberry variation' using 45% double cream. While the cream didn't curdled, the ice cream was exceptionally creamy and inedible. Will not be making again.

    Easy, delicious - winner.  Tip for creamier ice cream: first whip the cream for 30 seconds on speed 4, until about the consistency of double cream. Then lower to speed 2 and proceed with the recipe. It also makes it easier to scoop straight from frozen. I always make my own condensed milk (recipe from here) with a lot less sugar - about 80-100g - and it's still plenty sweet enough. Thanks for the recipe!

    Hmmmm. Not sure why it split on you - I have not had it split on me ever. I try to make it resemble what I would call thick cream, kind of like the one you dollop. Not as far as whipped cream would look. Hope that makes sense.
