- 200 gram raw sugar
- 300 gram natural unsweetened yoghurt
- 2 large or 4 - 5 small mangos, very ripe with flesh removed

Place thermoserver or metal slice tray into freezer to chill before starting preparation
Mill raw sugar until fine - speed 9 about 20 seconds
Remove from bowl and set aside
Place flesh from mangos into bowl and puree at speed 8 for 5 seconds
Remove most of mango puree from bowl leaving approx 1/4 cup of puree in bowl
Return milled sugar to bowl with reserved mango pulp
Heat for 2mins at 90 degrees speed 2 or until sugar as dissolved scraping down sides of bowl if needed.
Add remaining mango pulp and blend on speed 6 for 5 seconds
Add yoghurt and blend on speed 4 for 5 seconds,
Pour into thermoserver or tray and cover with plastic wrap, place into freezer until almost frozen - approx 3 hours.
Remove from freezer and pour back into bowl. Mix again for approx 20 seconds on speed 4 or until well combined.
Return back to freezer and freeze again for about 2 hours and repeat
Return again to freezer for about 1 hour and repeat mixing for the final time.
Place into storage container and when frozen again it will be ready to enjoy.
Tip
If you are in a hurry - don't worry about the 3rd freeze and mix step - the more times you do it the creamier it is but if you are eager to enjoy, twice is fine.
