Ingredients
Syrup
- 350 g water
- 600 g sugar
- ½ tsp cream of tartar
- ½ orange, rind only, use a peeler to peel 3-4 strips
- 1 cinnamon stick
Dough
- 500 g cake flour
- 4 tsp baking powder
- pinch salt
- 60 g Butter, cold & cubed
- 2 eggs
- 250 g Milk

Heat all syrup ingredients for 10min / 100degrees /speed 1.
Set aside in the fridge until very cold. It's a good idea to prepare the syrup the night before if you can.
Blend flour, baking powder, salt & butter for 5 seconds / speed 5
Add eggs & milk. Mix 5 seconds / speed 6. Then knead 2min / "Dough mode"
Pour about 7cm of oil into a pot & heat on the stove or use a deep fryer. While oil is heating prepare the dough. Be sure to monitor the oil so it does not get too hot.
Roll dough out into a large 1cm thick rectangle. Then cut out rectangles 4x2cm
Cut each rectangle into 3 strips but leave them connected at the top. Plait the strips then secure together at the end. These will be tiny plaits, they do get bigger as they fry.
Test the oil with a small ball of dough. If it drops to the bottom then almost immediately rises to the top & bubbles gently then the oil is ready.
Place up to 8 mini koeksisters into the oil at a time. Fry for 1min then turn over & repeat. They must be golden brown on both sides.
Remove from the oil & immediately dip in the cold syrup, leaving them to soak for 30 seconds. Sert Aside. A good idea would be to only use a ¼ of the syrup at a time so the rest stays cold in the fridge.
Repeat & then store all the koeksisters in the fridge. They taste even better the next day.

Tip
Freeze koeksisters in a single layer then store in container or sealable bag for when you need them. Great for preparing in advance of a party.
If you would like normal sized koeksisters cut the rectangles 7x3cm. Then when frying only fry 4 at a time & fry for 2min each side. You will get make 30-40 koeksisters.
