Ingredients

Adapted from Annabel Karmel's recipe. Makes 12 child portions or enough for 4 adults, 4 kids

  • 1 onion, medium, halved
  • 6-8 cm fresh ginger, optional
  • 40 g oil
  • 35 g korma or red thai curry paste
  • 2 tablespoon Veg Stock Paste
  • 150 g water
  • 1 can coconut milk (400ml)
  • 80 g dried apricots
  • 450 g butternut pumpkin, cut into 5cm pieces
  • 400 g chicken breasts, 2cm cubes

Recipe's preparation

  1. Chop onion & garlic 3sec / speed 7
  2. Add oil, saute 4min / varoma / speed 1, MC off
  3. Add pumpkin & apricots. Chop 5sec / speed 6
  4. Add stock, curry paste, water & coconut milk. Cook 10min / 100 degrees / Counter-clockwise operation"Counter-clockwise operation" speed 1
  5. Add chicken, cook 12min / 100 degrees / Counter-clockwise operation"Counter-clockwise operation" speed 1
  6. Leave to stand for 10min before serving with rice

Tip

For smaller babies you can blend at the end of cooking 2-3sec / speed 5. Repeat until happy with the consistency for your baby

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

    Very tasty! I omitted the water and used 2 tins of 270gr of coconut cream instead to get a thicker consistency.
