Strawberry ice cream
- 2 punnets strawberries, hulled
- 2 cans 400ml full fat coconut milk
- 1/2 cup of honey
- 4 Egg Yolks
- 1.5 teaspoons vanilla extract

Place the strawberries in the thermomix bowl and purée speed 7/30 seconds until smooth.
Transfer to a seperate bowl and set aside.
Place the coconut milk, honey, egg yolks and vanilla in clean TMX bowl. Combine on speed 5/10 seconds.
Cook custard 60deg/15 minutes/speed 1 until custard has thickened ad coats back of spoon.
Place custard in fridge for 30 minutes to cool.
Return custard to tmx bowl, add strawberry purée and blend speed 4/3 seconds.
transfer to a shallow plastic container and place grease proof paper or cling wrap over surface of custard and freeze for 2 hours.
Return to TMX bowl and blitz speed 9/20 seconds. Return to plastic container and freezer. Ice cream will be ready in approx 4-5 hours. Let sit at room temperature 20 mins before serving.
Alternative method using ice cream machine
Once cool pour custard into ice cream maker and then pour in the strawberry purée. The custard and purée will mix together as part of the churning. Follow ice cream machine instructions.

I found had to cook the mixture more..but it turned out great...Lovely flavour ...I used and iccream maker to freeze the mixture ...will make again...
This recipe is fantastic!
I accidentally "next levelled" this recipe by soaking some extra strawberries in a generous amount of balsamic vinegar when icecream first goes into freezer.
then in final prep add the extra strawbs and all the balsamic! And swirl through. .. you know, just like gourmet icecream has the swirl through it...
Its frigging awesome!
If you hate balsamic or vinegar, then give it a miss.
