Ingredients
Sauce
- 220 grams Greek yoghurt
- 200 grams sunflower oil, or avocado
- 250 grams continental flour
- 250 grams sugar
- 3 eggs
- 1 sachets vanilla sugar
- 1 teaspoons baking powder
Filling
- 400 grams Milk
- 4 tablespoons semolina
- 5 tablespoons sugar
- 750 grams ricotta
1 Packet Filo Pastry

I'm cooking this todayRecipe's preparation
- Heat milk on 100oc speed 2 for 3mins
- Add 5tbs of the semolina on speed 3, 90oC for 4mins. Let cool in bowl for 5mins
- Add 750grams of Ricotta cheese and 5Tbs of sugar and mix on speed 5 for 5secs. Remove and put in a bowl. No need to clean bowl.
- Add all ingredients under sauce to bowl and mix on speed 5 for 5 secs
- 1.Place a sheet on your silcone mat and spread 3-4tbs of sauce on each sheet, spread a light even layer with a pastry brush and repeat with 2 sheets.
Carefully not to tear the sheets.
2.Once you place the 4th sheet add about 3-4 table spoons of filling mixture to one end long ways and roll into a roll on the long edge.
3.Carefully lift and place on tray with baking sheet under it. Repeat until you have not sheets left.
4.Once all rolled put 2tbs of sauce on each roll and brush with a pastry brush and coat the top of pastry evenly with the sauce
Bake for 45mins on 180 fan force

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -
