Scottish Tablet
- 920 grams white sugar, granulated
- 200 grams full cream milk
- 60 grams unsalted butter
- 170 grams condensed milk

- Add all ingredients to Thermomix Bowl
Cook 20 minutes / 80 degrees / Speed 4 / MC ON until the sugar is dissolved
Cook 50 minutes / Varoma / Speed 1 / MC OFF
Scrape lid and sides of bowl
Mix 10 seconds / Speed 3 / MC ON
Cook 10 minutes / Varoma / Speed 1 / MC OFF until golden / light tan in colour
Test by taking a small amount out. It should set firm (but not solid) in a few minutes.
If required, cook for a further 10 minutes / Varoma / Speed 1 / MC OFF
Place steaming basket onto lid (MC OFF).
Mix 3 minutes / Speed 5
Mix 5 minutes / Speed 7 / steaming basket on lid (MC OFF)
Mixture should have a grainy consistency
Pour into a 25cm square tin. Tins should be non-stick or lined with baking paper.
Leave to cool for 10 minutes before cutting into 2cm squares and leaving in the try to cool fully.
Once cool, cut again and separate the pieces.
Store in a sealed container in a cool dark place.

Tip
A good alternative to a baking tray or tin is to use a silicone ice cube tray.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
