Place sugar into bowl and mill Speed 9/10 seconds
Add 350g of the ice cubs, strawberries, basil and juice of the lemon. Turn speed up slowly to speed 9/20 seconds.
Add remaining ice cubes and egg white. Turn slowly to speed 9 / 1 minute.
Use as much or as little basil as you like. We like it with about medium sized basil leaves in it with fresh strawberries. Gives a good hint of basil flavor without overpowering. The lemon brings a beautiful dimension to the flavors.

Since my strawberries are frozen I used 1000 gm. strawberries the first time and 900 gm. today with no ice. Today loosely chopped my basil to make 1/3 cup and don't find it too strong. I also added 2 Tbsp. Pastis at the same time as the egg white so that it won't freeze rock solid and it adds a nice flavour. Used lime instead of lemon this time since that's what I had. Thanks for posting this recipe, it was a big hit at a party I took it to in July; people were disappointed when the first container came to an end and then joy when the second container came out of the freezer! A keeper!

I used only 5 leaves so there was just a hint of basil. Will definitely make this again.

Excellent! So good, I only remembered to take a photo half way through dinner. I used 10 pieces of basil, loved the flavour. After I added the egg white, I used the TM spatula during the last minute. This made the sorbet extra creamy. 2 Weight Watcher Propoints per serving.
