Ingredients
Vanilla Custard
- 650 g whole milk
- 300 g fresh cream
- 85 g unsalted butter, Roughly chopped
- 2 Fresh Large eggs
- 4 Fresh Large Egg Yolks
- 200 g sugar, (see tip for variation)
- 80 g cornflour
- 2 tablespoon vanilla extract
Chocolate Custard
- 115 g Chocolate of choice, (omit Vanilla Extract)
Mocha Custard
- 115 g Chocolate of choice
- 2 tsp instant coffee, dissolved in 2tsp water
- (omit the vanilla extract)

Mill Sugar 10 sec/speed 9.
Add all remaining ingredients, cook 10 minutes/90 degrees/speed 4.
Serve warm or cold, it's delicious either way.
Vanilla Custard
Tip
I love this recipe because it does not have the eggy taste that a lot of others do.
The Sugar:
The original recipe stated 200g of sugar, but I have found that 160g or even less was still amazing. You will need to play around with the sugar quantity to fit your liking.
I have recently replaced the 200g of raw sugar with 200g of Rice Malt Syrup, and it tasted beautiful and not even my hubby tasted any difference.
The Flavour:
The Vanilla extract that I use is my own homemade one...Vanilla Beans steeped in Vodka for months and months. I felt that the alcohol in this Vanilla extract helped to give the custard a lovely depth of flavour.
For Chocolate Custard, replace the Vanilla Extract with 115g of Chocolate of choice and cook as per recipe.
For Mocha Custard replace the Vanilla Extract with 115g of Chocolate of choice plus 2 tsp of instant coffee granules dissolved in 2 tsp of water and cook as per the recipe.

Wow this one is the best custard ever.. I also did not like the eggy taste. I doubled it and added 4 while eggs and only 4 yolks, 320g sugar and. Perfect!!
