Ingredients
Tiramisu
- 6 egg yolks
- 5 whole eggs
- 750 grams caster sugar
- 2 kgs mascapone
- 3/4 cup marsala
- 1/2 cup scotch whiskey
- 1/2 bain coffee, brewed
- lady finger biscuits

Line two 30cm spring formtins with spray and cling wrap.
Insert the butterfly.
Place egg yolks, eggs & caster sugar into mixing bowl and cook 5 min/80*C/speed 4. Then 1min/90*C/speed 4.
Cool the mixture 15min/37*C/speed 3
Remove egg mixture and put it into other mixer with whisk attachment, add alcohol and mascarpone and whisk until thickened.
To layer the Tiramisu
Dip the biscuits into the coffee and lay them flat on base of tin, top with a 1/4 of mixture and sprinkle with chocolate powder, then another layer of dipped biscuits and finish with other 1/4 of mixture repeat the same process with the other half of mixture.
Set in refrigerator for atleast 8hours.
