Ingredients
Waffles with Maple Bacon
- 400 g Streaky Bacon
- 2 tbsp Pure Maple Syrup
- 2 eggs, Separated
- 310 g full cream milk
- 100 g unsalted butter
- 1 tsp vanilla extract
- 260 g self-raising flour
- 35 g caster sugar

- Preheat oven to 190°C. Line a baking tray (30x40cm) with baking paper.
- Place bacon rashers in a single layer onto prepared tray and bake for 10 minutes on 190°C. Remove tray from oven and brush one side of bacon with syrup.
- Preheat grill. Grill bacon until crispy or as desired.
Transfer into a thermal serving bowl or other large bowl and cover to keep warm. - Insert butterfly whisk. Add egg whites and whisk 2 min/speed 3.5.
Put egg whites aside.
Rinse and Dry Bowl. - Add butter and melt 3 min/60°C/speed 1.
- Add milk, egg yolks and vanilla extract.
Mix 5 sec/speed 5 - Add flour and sugar, mix 10 sec/ speed 5.
Scrape pie down sides of bowl and repeat mix process. - Add reserved egg whites and fold into batter with spatula.
NOTE: You can can also use Thermomix on low speed setting until happy with consistency. I used speed 1 for about 10 minutes pausing to scrape sides occasionally. - Pour batter directly into waffle iron as per directions on your waffle iron.
- Follow cooking directions on your waffle iron as each brand/model is different.
- Once cooked, plate and top with bacon.
Top with extra maple maple syrup if desired.
