Recipe's preparation

  1. Wash the lemons, cut them into quarters and put them into thermomix. Add the ginger in small pieces and cut gradually for 10 sec, on speed 4 to 9.

    Scrape down the little pieces and add the sugar, the water and mix> temperature 100, speed 2, 10 min. 

    Remove the lid and let cool down. when temperature is 70, add the two tbsp of honey and mix with spatula. This is in order not to destroy the benefits of honey due to overwarming. 

    Let it cool completely and then put the mixture into bottle after passing it from thin collander. The simmering basket will help a lot: Together with the spatula will keep the lemon and ginger pulp on the bottom.

    You may add spearmint leaves into the bottle. Mixture is quite dense and spicy, perfect for little shots (ideal with crushed ice) or mix it with water or sparkling water for a longer drink!

Tip

It can stay in the fridge for a loooong time, but it won't last THAT long! Very versatile drink. Can be added also to smoothies or tea.
