Ingredients

  • 2 cardamom pods
  • 1 cinnamon quill
  • 3 cloves
  • 4 Peppercorns
  • 100 grams Raw macadamias, soaked for 2 hours, rinsed and drained
  • 800 grams filtered water
  • 20 grams honey, or natural sweetener to taste
  • 20-40 grams Carob Powder, to taste
  • 1/2 teaspoon Carob Powder, for sprinkling (optional)

Recipe's preparation

  1. 1. Place cardamom pods, cinnamon stick, cloves and peppercorns into mixing bowl and mill 7 sec/speed 7. Transfer into a small bowl and set aside.

  2. 2. Without cleaning mixing bowl, place macadamias, water, carob powder and honey into mixing bowl and blend 1 min/speed 9.

  3. 3. Insert simmering basket and place ground spice mixture into it. Cook 8 min/80'C/speed 4. Remove simmering basket with spatula.

  4. 4. Strain nut mixture through a nut milk bag into a large jug and set aside. Rinse mixing bowl.

  5. 5. Return milk to mixing bowl and heat 2 min/80'C/speed 4.

  6. To froth, blend 15 sec/speed 8. Pour into cups and sprinkle with a pinch of carob powder. Serve immediately.

Tip

If you don't mind your nutmilk a little 'nutty', you can skip step 4.

For a cool beverage option, allow to cool and enjoy with ice. Blend with frozen banana for a delicious spiced carob smoothie.

Substitute macadamia milk for your milk of choice. 

Macadamia milk keeps in the fridge for 2-3 days.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
