Ingredients

Curried Sausages (The Best Ever)

  • 1000 grams Thick Beef Sausages, Cut into 4-5 cm pieces
  • 2 onions, Thinly sliced
  • 2 Cups of beef or chicken stock, Enough to cover food
  • 1 Cup of green peas
  • 3 Medium potatoes, cut into chunks
  • 2 carrots, Thinly sliced
  • 2 tbsp curry powder
  • 2 garlic cloves, crushed
  • 2 tbsp Corn Flour
  • 2 tbsp fruit chutney
  • 1 tbsp olive oil
  • Salt & Pepper, To taste

Recipe's preparation

    Instructions
  1. Cook Sausages:


    Heat the oil in a large frypan over medium-high heat. Add the sausages in batches and fry until just cooked. Turn them often to cook evenly and avoid burning. Remove from the heat and allow to cool slightly, then slice into 4-5 cm pieces.



    Prepare Onions and Garlic:


    Place onions and garlic into the Thermomix bowl, chop for 5 sec/speed 5.
    Scrape down the sides of the bowl, add olive oil, and sauté for 3 min/120°C/speed 1.



    Cook the Curry:


    Add curry powder and sauté for 1 min/100°C/speed 1.
    Add sliced sausages, stock, carrots, and potatoes. Cook for 20 min/100°C/Reverse/speed 1.



    Add Peas:


    Add peas and cook for an additional 10 min/100°C/Reverse/speed 1.



    Thicken Sauce:


    Mix cornflour with 4 tbsp of water in a small dish.
    With the Thermomix running at 90°C/Reverse/speed 1, slowly add the cornflour mixture through the lid. Cook for 5 min/90°C/Reverse/speed 1.



    Add Chutney:


    Add fruit chutney, salt, and pepper. Mix for 1 min/90°C/Reverse/speed 1.



    Serve:


    Serve immediately over mashed potatoes or cooked rice.
