Ingredients
Tammy’s Chicken Mornay
- 125 grams cheese, Cut into cubes
- 200 grams middle bacon, Cut into 3cm cubes
- 1 --- chicken breast, Diced into 3cm cubes
- 30 grams olive oil
- 80 grams unsalted butter
- 80 grams plain flour
- 250 grams Liquid Chicken Stock, or 250mls of water and 1 Tbsp of Chicken Stock paste
- 250 grams full cream milk
- 200 grams mixed frozen peas, corn, carrots
- 1 cans canned creamed corn

- Cut cheese into cubes add to bowl. Grate 6 seconds Speed 7
- Remove Cheese and set aside
- Weigh 200g Middle bacon into bowl diced into 3cm cubes
- Add 30g Olive Oil to bowl
- Saute Bacon 3 minutes / varooma temp / "Counter-clockwise operation" speed 1
- Add diced cubed chicken to the bowl 8 minutes / varooma / "Counter-clockwise operation" speed 1
- Shred bacon and chicken 5 seconds / "Counter-clockwise operation" speed 4
- Remove shredded bacon and chicken and any juices and set aside
- Weigh 80grams unsalted butter into the bowl
- Weigh 80grams plain flour into the bowl
- Cook 5 minutes / 90 degrees / speed 1
- Weigh 250grams of liquid chicken stock, or 250grams of water and a Tbspn of chicken stock paste into the bowl
- Weigh 250grams full cream milk into the bowl
- Cook 7 minutes / 90 degrees / speed 3
- Add in this order to the bowl - 1 cup of the frozen veg, reserved shredded chicken and bacon, can of creamed corn, and the shredded cheese
- Cook 15 miuntes / 100 degrees / "Counter-clockwise operation" speed 1 , you may need to use your Thermomix spatula to help combine the ingredients through the hole in the jug where the MC is placed - ONLY USE YOUR THERMOMIX SPATULA WITH THE GUARD TO DO THIS
- Extend your cooking time by five minutes if your frozen veg is not cooked to your liking
Tip
At step 6 you may wish to add cooked roast chicken, to the weight of approximately 250 grams and skip the cooking move to step 7 shredding the chicken .
At step 15, you may wish to transfer your mix to a baking dish and top with the additional cheese and bake in a moderate oven 180 degrees, for roughly 20 minutes or until cooked through and the top is melted and delicious golden brown.
Also add salt and pepper to taste if needed.
This could also be served with rice, cooked pasta, or mash potato. Our family think its best served in a bowl on its own .
