Ingredients

  • 100 g green curry paste, try my Thai Green Curry Paste
  • 800 g coconut milk
  • 450 g bamboo shoots, canned
  • 950 g chicken thigh fillet, cut into 2cm pieces
  • 12 Kaffir lime leaves
  • 2 tablespoons Fish sauce (to taste)
  • 2 tablespoons lime juice
  • 2 teaspoons finely grated lime zest
  • 100 g frozen peas
  • 100-200 g broccoli florets
  • 1 bunch fresh coriander or basil leaves

Recipe's preparation

  1. Place curry paste and 120ml of the coconut milk into mixing bowl and cook for 2 min/Varoma temperature/speed 1Leave measuring cup off.


    Add remaining coconut milk, bamboo shoots and kaffir lime leaves and cook for 8 min/100ºC/Reverse/speed soft. 


    Insert Butterfly.


    Add chicken and continue to cook for min/100ºC/Reverse/speed soft.


    Add fish sauce, lime juice, lime zest, peas and broccoli, coriander/basil leaves and cook for min/Varoma temperature/Reverse/speed soft.


    Serve with jasmine rice and garnish with fresh coriander and sliced red chillies.

    Made this only did half mix as we weren't very hungry due to having late lunch there was plenty to feed 2 adults and a teenage boy with another serve for leftovers. Did use jar brought curry paste, only complaint from fussy husband is it could've had bit more curry as I only put half amount in, but he wants it again. Absolutely delicious

    I halved this recipe and changed the veg in it. I didn't have any kaffir lime leaves so omitted them. It turned out great, so easy and so tasty, it got a big thumbs up.

    This is absolutely delicious! I've made it so many times now. My husband said why would we eat out? This tastes like restaurant Thai food!
    I use probably 8 Kaffir lime leaves and halve the shop bought green curry paste as it was initially too spicy. I also use coconut cream instead (400mL) and then add in around 200g water. Just our preference tmrc_emoticons.)
