Better Macaroni Cheese
100 g cheddar cheese, cubed (2 cm) 60 g parmesan cheese, cubed (2 cm) 100 g sweet potato, peeled, cubed (1 cm) 100 g carrot, peeled, cubed (1 cm) 100 g pumpkin, peeled, cubed (1 cm) 1 zucchini, roughly chopped (peeled if preferred) 300 g macaroni 1,200 g
- 100 grams Cheddar cheese, cubed 2cm
- 60 grams Parmesan cheese, cubed 2cm
- 100 grams sweet potato, peeled, cubed 1cm
- 100 grams carrot, peeled, cubed 1cm
- 100 grams pumpkin, peeled, cubed 1cm
- 1 zucchini, roughly chopped (peeled if preferred)
- 1200 grams water
- 300 grams Dried Macaroni Pasta
- 500 grams Milk
- 50 grams plain flour, or spelt flour if you wish
- 40 grams Butter, 1 cm cubed
- 200 grams ham, diced
- 1 heaped tsp Dijon mustard
- .5 level tbsp Paprika powder
- 1 tbsp chicken stock paste
- 1 pinch black pepper, freshly ground

- 1️⃣ Grate Cheese
Add cheddar and parmesan to mixing bowl, mill 10 sec/speed 9. Set aside.
2️⃣ Boil Water
Add 1,200 g water to mixing bowl, heat 10 min/Varoma/speed 1.
3️⃣ Prepare Vegetables
While water is heating, cut vegetables and place them in the Varoma tray.
4️⃣ Cook Macaroni & Steam Vegetables
Add macaroni to boiling water.
Place Varoma tray in position.
Cook 10 min/Varoma/speed 1/reverse.
Drain macaroni and transfer to a thermal pot to keep warm.
5️⃣ Make Vegetable Purée
Add steamed vegetables and 100 g milk to mixing bowl. Purée 30 sec/speed 8 until smooth.
Stir purée through macaroni.
6️⃣ Prepare Sauce
Add flour, remaining 400 g milk, and butter to mixing bowl. Cook 6 min/90°C/speed 2.
(Optional: While sauce is cooking, pan-fry ham or bacon for extra flavor.)
7️⃣ Combine Sauce Ingredients
Add reserved cheeses, ham, mustard, paprika, stock concentrate, and pepper.
Cook 2 min/90°C/speed 2/reverse.
8️⃣ Assemble & Serve
Pour sauce over macaroni and mix well.
Taste and adjust seasoning with salt if needed.
💡 Tip: Makes 8 large servings. Freezes and defrosts well!
