Gluten Free Steamed Chocolate Muffins (No Refined Sugar)
- 100 g Dark chocolate (70% cocoa), unsweetened if preferred
- 60 g Butter, or coconut oil
- 2 portions eggs
- 80 g Majool dates
- 1 level tsp Vanilla Paste
- 100 g almond meal
- 30 g cocoa powder
- 1 level tbsp baking powder
- pinch salt
- 2 dashes Almond milk
- chopped walnuts optional

- 1. Prepare varoma:
*Lightlys or ramekins. grease silicone muffin mould
*Arrange them in the varoma tray with room for steam to circulate.
2. *Melt chocolate and butter
*Add chocolate and butter (or coconut oil) to the mixing bowl:
*3 min, 50 degrees, speed 2
3. *Add banana or dates, eggs, vanilla:
*Add to bowl and blend: 10 sec / speed 5, then scape down
*10 sec / speed 6 until smooth
4. *Add dry ingredients:
*Add almond meal, cocoa, baking powder, and salt and milk if needed
* 20 sec / speed 4
5. *Fill moulds
*Divide the batter between moulds, fillg about 3/4 full.
6. * steam in varoma:
* Add 500 ml water to clean mixing
*Set Varoma in place
*Cook Varoma / 25039 min / speed 2
7. *Check doneness
* A skewer should come out clean when cooked
8. *Cool and serve:
*Let sit for 5 mins before unmoulding. Serve warm or room temp.
