- Place tarragon, spring onion/shallot and peppercorns into mixing bowl and chop 6 sec/speed 8. Scrape down sides of bowl. Insert butterfly. Add all remaining ingredients and cook 4-5 min/80℃/speed 1, or until sauce has thickened and emulsified. Serve immediately. General tips Serve béarnaise with steak and your favourite vegetables.Remove béarnaise from the mixing bowl immediately after cooking to prevent splitting.
