Beetroot & Feta Dip
- 1 Raw beetroot
- 1 Handful of cashews (salted)
- Australian feta (half a block)
- 1 level teaspoon sunflower oil
- 4 level tablespoons balsamic vinegar

I'm cooking this todayRecipe's preparation
Place peeled and chopped Beetroot in TM bowl mix gradually from speed 1-9
Scrape down sides and add handful of cashews, again mix gradually from speed 1-9
Scrape down sides and add Feta, Oil & Vinegar
Mix for 30 seconds on speed 3 or until desired consistency is achieved
Place in a bowl and add extra vinegar if needed!
Serve with crackers or fresh bread
Enjoy

Very nice dip. I love that it uses raw beetroot.
I added a few small garlic cloves in step 1 and a bit of natural yoghurt in the final step.
I too, reduced the balsamic vinegar, only adding 30g.

Absolutely delicious. I only added 1 tbsp of vinegar because of other comments but my husband wanted more so in end added about 3 tbsp! Lovely

I used 2 Beetroot and and also 2 handfulls of cashews and it is fantastic. Next time I will reduce the balsamic a bit and only pulse the whole lot together to keep it chunkier. Great.
