Ingredients

  • 1000 grams quinces, washed to remove fluffy coating if present, roughly chopped (see General Tips), remove harder pieces of core retain seeds
  • 550 grams raw sugar, (coconut sugar or rapadura can also be substituted)
  • 1/2 lemon flesh only

Recipe's preparation

  1. Weigh cut quinces into TM bowl and chop 10 seconds, Sp 7.

     

    Scrape down sides of bowl.Add sugar and lemon. Mix 10 sec Sp 5.

     

    Cook 40 mins, Varoma temperature, Sp 1.5 without MC, with simmer basket on top.

     

    Scrape bottom of bowl.

     

    Cook 20 minutes at 105 degrees C, Sp 1.5.

     

    Scrape base again, and repeat cooking for 20 mins, 105 degrees C, Sp1.5.

     

    Scrape base again, if very dark ruby red, the quince paste is cooked.

     

    If not cook a further 10 mins as above.

     

    When the desired colour is achieved place MC onto lid and puree for 5 seconds on speed 7. A slightly grainy texture is traditional.

     

    Pour and scrape the quince paste, using spatula into moulds or slab tray. Allow to cool and place in low oven 120 degrees C for an hour to set.

     

    When completely cold, wrap in baking paper and store in an airtight container in the pantry for up to 6 moths. 

     

    After this time it tends to dry out a little but is still safe and edible for another 3 to 4 months.

Tip

Cooking time varies depending on the age and ripeness of the quinces.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
