Ingredients
- 500 gms of fresh cherries (stones removed)
- Juice of 1/2 a medium sized lemon
- 300 gms of brown sugar
- 1/2 teaspoon of citric acid

Put cherries and lemon juice into Thermomix and cook for 10 minutes at 50 degrees on speed 1.
Add sugar and cook for 2 minutes at 50 degrees on speed 1 to dissolve sugar.
Cook for 25 minutes at 100 degrees on speed 1.
(Check to see if jam is set by placing a small amount into the freezer for 5 minutes. When you take it out, run your finger through the jam and if the jam runs back over your finger mark it isn't set yet and you need to cook for a further 5 minutes at 100 degrees. If it is set your finger mark will remain on the plate).
Add citric acid to the bowl and cook for 1 minute on 100 degrees.
Set Thermomix to speed 5 for 5 seconds to slightly chop the cherries.
Jam is now ready to be placed in a sterilised jar.
Tip
One of the best things you can invest in if you make a lot of cherry jam (or eat a lot of cherries) is a little hand held device that removes cherry pips quickly and easily.

yummy.. Didn't have citric acid, so left it out. i whizzed It before adding sugar, and then set for 30 minutes at 100. Needed another 8 on varoma to jam. Looking forward to eating it on toast and pancakes.
