Spiced Plum Sauce - Donna Hay conversion
- 85 grams brown sugar
- 125 grams red wine vinegar
- 4 whole dried chillies
- 2 whole star anise
- 1 cinnamon stick
- 400 grams plums, halved and pitted

Place sugar, vinegar, chillies, star anise and cinnamon into the bowl. Cook at speed 1, "Counter-clockwise operation" , 80 degrees for 5 min
Add plums and cook speed 1, "Counter-clockwise operation" , 80 degrees for 8-10 min with the MC REMOVED.
Plums should be soft and sauce reduced.
Serve with Roast Pork.

This recipe is the tmx conversion of a Donna Hay recipe. Such a good balance of sweetness, acidity and spicy.
Sauce turned out great. I made one batch as per recipe and the other I cooked down for a an hour to make a sauce suitable more marinating pork spare ribs. Will make again
I've made this sauce twice, once with canned and once with fresh plums. Tasty both times. I did follow comments and removed the cinnamon stick and star anise at the end. Then I blended for 30 seconds. So quick and easy to make !
Sauce was delicious! I removed the cinnamon stick and blended it for a few seconds once everything was cooked. My home grown chillies were super hot, but luckily my family love hot food. My husband loves it!
This sauce is lovely. I put in 3 teaspoons of dried chilli flakes and the end result was so hot i made another batch with just the sugar, vinegar and plums and then blitzed the 2 batches together. i'll be using the sauce as a marinade and I like the idea of using it in a stir fry. I dont know how long it lasts in the fridge so might have to give a jar away.
YUM! I omitted the chilli altogether so our toddler could eat it and removed the star anise and cinnamon at the end before blending it to a smoother consistency so I could use it as marinade for pork ribs. Absolutely delicious thanks for sharing
Thinking of making this for a present.. any ideas on refrigerator time?
Sauce was great! Made it for a pork roast and with the left overs I plan to make a plum sauce stir fry. I just removed the cinamon stick and blended for 30seconds on speed 8 once everything was cooked.
