Ingredients
Spice Mix
- 1 teaspoon rock salt
- 1/2 teaspoon Peppercorns
- 2 teaspoons dried chilli flakes
- 2 tablespoons Dried Onion Flakes/Granules
- 1 teaspoon dried garlic granules
- 1 teaspoon dried thyme
- 2 tablespoons dried oregano
- 2 teaspoons cumin seeds
- 5 tablespoon breadcrumbs

- extra virgin olive oil

This recipe will make a small jar of mix, enough to prepare 6 large steaks. Ensure that your bowl is very dry before starting especially if you are planning to store your spice mix.
Place salt, peppercorns and chilli flakes int the mixing bowl and mill for 3 sec / speed 10.
Add all remaining herbs/spices (excluding breadcrumbs) and mill for a further 4 sec / speed 10.
Add breadcrumbs and mix for 4 sec / speed 5.
Place spice mis into an air-tight container until required (if kept dry and cool is should last as long as your dried herbs)
Mix 2 tablespoons of the Spice Mix per 350g steak with enough extra virgin olive oil to make a sticky paste.
Uncover steaks and roughly remove most ofthe spice rub prior to cooking the steaks or the excess spices will burn and overpower the wonderful taste of the spices.
