Sweet Chilli Jam
- 50 grams fresh chillies, medium heat
- 20 grams garlic cloves, Peeled
- 20 grams fresh ginger, Peeled
- 1,000 grams tomatoes
- 50 grams fish sauce
- 200 grams red wine vinegar
- 600 grams white sugar

- Weigh in chilli,garlic, ginger.
"Blend" 10 sec, Speed 8 - Scrape down
- "Blend" Repeat 5 sec Speed 8
- Weigh in 1 kilo of tomatoes that are cut in half or quarters.
- "Blend" 40 sec Speed 8.
- Add Fish sauce, red wine vinegar, sugar
"Blend" 20 sec Speed 6. - Tip out 1 litre of the mixture into a jug and set aside, this will be added in during the cooking process in stages.
- All models 31,5,6 cook with lid on and Varoma base on the lid in place of the MC for 20 mins, Varoma, Speed 2.
- Add half of the uncooked mixture to main bowl
Place lid and Varoma base back on, cook 20 mins, Varoma, Speed 2. - Add the remaining uncooked mixture.
Plcae lid and Varoma base on, cook 30 mins, Varoma, Speed 2. - Pour into sterile jars.
Keep in pantry.

Tip
You can use the chilli type of your choice and it will turn out accordingly to the type of hotness of the original chilli.
You may add lemongrass.
I leave all the seeds in.
I do not skin the tomatoes, they get broken down.
Use in hamburgers
As a condiment with cheese.
On top of a block of cream cheese.
In any dish to add a great flavour kick.
On grilled meats or fish.
As a dipping sauce.
