Ingredients

  • 1 fennel bulb, outer layer and top 'sticks' removed, and round bulb then quartered
  • 1 orange, skinned and quartered
  • 1 small handful fresh parsley, roughly chopped
  • 1 spring onion, skinned and roughly chopped
  • Good splash EVOO (extra virgin olive oil)
  • 8 pitted kalamata olives

Recipe's preparation

  1. ensure olives are really pitted (the jars can lie!)

    place fennel, olives, orange, parsley, spring onion in TM bowl

    turbo for 2 x 1 second

    empty it into a bowl, pour a lug of olive oil over the top and eat!

Tip

The guy at the greengrocer tells me that the more shapely bulbs are more delicious

    I made this for lunch today with some baked salmon on top. Delicious! I will probably omit the olives next time and add more herbs tmrc_emoticons.-)

    This was enough for 2 of us as a side dish, but I over blitzed it by a couple of seconds, and it was a bit mushy. Tasty mush, though! Better to set the timer for 2 seconds than to guess, as I did! I'll try it again. Walnuts sound good on top!

    Delicious and so simple. topped it with some walnuts as had them handy which added to the texture.
