- left over Thermomix risotto, refrigerated over-night
- 1x1 cm of your favourite cheese cubed, roughly 25 of them
Coating
- 2 eggs, whisked for egg wash
- plain flour for coating
- Breadcrumbs for coating

- canola oil, for frying

I'm cooking this todayRecipe's preparation
1.1 Place a scoop (roughly a dessert spoon size) of your TM risotto of choice onto your palm and slightly flatten.
1.2 Add a cube of your cheese into the centre and roll into a ball (ensure the cheese cannot be seen on the outside).
1.3 Repeat with remaining mixture and refridgerate for 30 minutes.
2.0 Blitz the breadcrumbs (if using normal bread) for 10 secs on speed 10 and set aside.
2.1 Remove from fridge and coat in the flour (this acts as a glue for the egg).
2.2 Next, roll the balls in egg (this give the breadcrumbs something to stick to).
2.3 Finally, coat them in the breadcrumbs.
2.4 Repeat with all and place back on the tray and in the fridge for a further 15 minutes.
3.1 Once again, remove from the fridge and shallow fry until golden brown.
3.2 Allow to cool for a minute or two.

Tip
-I recommend serving with a dipping sauce (for example: sour cream mixed with sweet chilli). Simply add ingredients and mix on reverse, "Gentle stir setting" .
-If you wish to add a light sprinkle of cheese on top place 50g in TM bowl and blitz on speed 10, for 5 secs.
